i happen to have gotten unified belts for all 8 weight classes and wondered what happens when a champion retires? Does the number one contender automatically become the champion or is it vacant with the number one contender having to win an additional fight to become champion. I assume retirement is a random event correct?

Retirements are occur (usually on a loss) and judged after every fight.
In the instance of a champ retiring the belt will be handed as interim to #1 ranked guy.
As we have said before the game is too easy in current configuration. 
We will be adding an option to sort this:)
Thanks for the clarification. I thought that was the case but wasn’t sure. Do you know what the oldest a boxer can theoretically box at in the game? I think I have seen 43 or 44 as the oldest.
